Why is My Breakfast so Eggcellent?

So far my decision to eat better has been going well this year. I haven’t yet kicked into flexitarian status, but I’m working on it. I’ve stopped eating a lot of processed food and been focusing on food that is better for me. Of course breakfast has been called the most important meal of the day, but what’s a meal without the right foods?

I’ve noticed that I’ve been eating eggs a lot more. Boiled eggs, mostly. A little salt, pepper and crushed red pepper.. yum! These little suckers are a great breakfast food for a variety of reasons.

They are a great source of protein.
Whole eggs have all the essential amino acids that we need in our diets.

They keep you feeling full longer.
With eggs, your energy levels are sustained longer thanks to the protein and fat. You’re satisfied for longer which cuts your mid morning snack craving.

They are pretty inexpensive.
Compared to the meat at your local market, a carton of eggs doesn’t hurt your wallet.

They protect your eyesight.
Eggs contain leutin and zeaxanthin, which have been linked to reducing cataracts and protecting your eyes from UV damage.

They help with memory and brain development.
Eggs contain choline, which is an essential nutrient that stimulates brain development and function. It also is related to improving alterness and increasing the retention of memory.
